I don't normally but this one demands my review. I don't know where to begin but the title itself is misleading. There are no sketches, pictures, renderings of any kind. Chapter 7 - "Back of the House" is all of 9 pages. Chapter 8 "Equipment" is 8 pages. Answers to questions like "What kind of equipment will I need?" Answer - Thumb through food service equipment catalogs. Look for capacity figures, energy ratings and construction methods." This book is totally useless. If any other of the books in this series are like this issue - stay away.
